The Production Chain
Our collaboration with local food producers ensures a good selection of meals, taking into consideration the different seasonality of the agricultural products.
We have a collaboration with Lo Courtì de la Santì; the vegetable gardens are located in Doues (1200 meters of altitude) and we have the safety that products are genuine and the flavor of vegetables grown with passion and natural rhythms is unique and authentic.
The small business offers vegetables grown in open fields or under heated greenhouses, often picked in front of the consumer.
All products are grown in full respect of land and health without using pesticides or artificial fertilizers.
The cultivation work is done exclusively by hand following the natural rhythm of seasons, without using mechanical equipment.
Another collaboration with Le Foyer Des Reines farm, one of the best producers in Aosta Valley of a local cheese called “Fontina” that in 2014 won the “Grande Medaille d’Or”, the award for best Fontina DOP produced in high altitude during summer.
Products are born from the pastures around Rifugio Champillon and come directly in our kitchen to ensure freshness.
Local producers are a foundamental collaboration for the success of our cuisine.
Thanks to the passion with which they devote to their work. they provide excellent quality of products to our Refuge.
